When I submit an app for the NOOK I have a few options for supported platforms. Does Corona support all three? I know on "regular" Android support is for Android 2.2+ ... no idea how that translates to NOOK though.

NOOK Color (Froyo)
Checkbox for 1.2
Checkbox for 1.3

NOOK Color (Gingerbread)
Checkbox for 1.0

Yes, Corona supports all 3.

"Froyo" is Google's codename for Android 2.2.
"Gingerbread" is Google's codename for Android 2.3.
Corona supports Android 2.2 and higher devices.

I believe the checkboxes for 1.2, 1.3, and 1.0 are Nook firmware versions... which I don't think are relevant.
