Is there any way I can create my GUI with Interface Builder and do everything else in Lua? I am new to Lua and I don't want to work in Objective-C at all for this. It would be great to be able to use nibs. Thank you.

Unfortunately, the answer is no. We have no plans to support nibs at this very moment. But it is something that we may revisit soon.
